A Valentines Dinner Plan that is as healthy as it is Delicious
We usually go over a couple of different recipe ideas but instead we have prepared an entire healthy meal complete with an appetizer, main course and dessert and best of all it’s entirely guilt free.
Appetizer:
Smoked Salmon Rolls
6 thin sliced smoked salmon
2 Tbsp reduced fat, whipped cream cheese
½ tsp chopped fresh dill
2 Tbsp. finely chopped red onion
1 tsp. capers
Combine cream cheese and dill. Spread on the strips of salmon. Sprinkle on the onion and the capers. Use decorative toothpick to hold them together. Roll up and serve chilled.
Dinner:
Shrimp Kebobs with Easy Risotto
1 dozen large gulf shrimp, peeled and deveined.
1 package, Uncle Ben’s precooked Long Grain and Wild Rice
3 strips turkey bacon, chopped
2 tsp. olive oil
¼ cup minced onion
1/3 cup cherry tomatoes, split in half
1/3 cup green onions, chopped
1/3 cup half and half
salt and pepper
In a nonstick saucepan, cook turkey bacon in olive oil on medium high for about one minute. Add onions and cook until translucent. Add contents of rice package. Heat through. Add cherry tomatoes, green onions, half and half and salt and pepper to taste. Again, cook until everything is heated through being careful not to burn. Set aside.
Place shrimp on skewers. Sprinkle with your favorite seafood seasoning and grill until desired doneness - usually just a couple minutes on each side over medium heat.
To serve, plate risotto and lay two skewers of shrimp on top. You may garnish with parmesan shavings or parsley.
Dessert:
Jello – n – Berries
1 cup any combination of blueberries, blackberries and sliced strawberries
1 pkg. sugar free strawberry jello gelatin
½ cup plain, unsweetened yogurt
1 Tbsp. sugar free strawberry preserves
1 packet Splenda
sugar free cool whip
Make jello gelatin according to package directions stirring in berries at the end. Leave out some berries for garnish. Pour into serving dishes (only filling half full) and allow to set up in refrigerator. Meanwhile, mix together yogurt, preserves and Splenda packet.
When jello has set up, spoon yogurt blend on top, smoothing it out to make an even layer. Top with cool whip and garnish with some extra berries.
